  • 1/4 cup dark rum (spiced rum works well too)
  • 2 tablespoons butter (or coconut oil for a dairy-free option)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon (optional, but adds warmth)
  • fresh mint leaves for garnish optional

Instructions

  • Start by heating a large skillet over medium heat. Add the butter and let it melt until it starts to bubble.
  • Once the butter is melted, add the brown sugar and stir until it’s dissolved, creating a syrupy mixture.
  • Next, add the pineapple chunks or rings to the skillet. Cook for about 3-4 minutes, turning occasionally until they start to caramelize.
  • Now, pour in the dark rum and continue cooking for another 2-3 minutes, letting the rum flame up carefully.
  • Stir in the vanilla extract and cinnamon, allowing the mixture to thicken slightly.
  • Remove from heat and garnish with fresh mint leaves, if desired. Serve warm!
