- 1 whole ripe pineapple (peeled, cored, and cut into rings or chunks)
- 1/4 cup brown sugar (substitute with coconut sugar if desired)
- 1/4 cup dark rum (spiced rum works well too)
- 2 tablespoons butter (or coconut oil for a dairy-free option)
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon (optional, but adds warmth)
- fresh mint leaves for garnish optional
Instructions
- Start by heating a large skillet over medium heat. Add the butter and let it melt until it starts to bubble.
- Once the butter is melted, add the brown sugar and stir until it’s dissolved, creating a syrupy mixture.
- Next, add the pineapple chunks or rings to the skillet. Cook for about 3-4 minutes, turning occasionally until they start to caramelize.
- Now, pour in the dark rum and continue cooking for another 2-3 minutes, letting the rum flame up carefully.
- Stir in the vanilla extract and cinnamon, allowing the mixture to thicken slightly.
- Remove from heat and garnish with fresh mint leaves, if desired. Serve warm!
