  • 1 tablespoon olive oil

  • 1 (10-ounce) package frozen chopped spinach (thawed and squeezed dry)
  • 4 ounces feta cheese (crumbled)
  • 2 ounces cream cheese (softened)
  • 1/4 cup grated Parmesan cheese
  • 1 clove garlic (minced)
  • 1/4 teaspoon dried oregano

Instructions

  • Preheat your oven to 375°F (190°C). This ensures the chicken cooks evenly from the start.
  • Prepare the chicken breasts. Place each chicken breast between two pieces of plastic wrap. Pound them with a meat mallet or rolling pin until they are about 1/4-inch thick. This creates a nice, even surface for rolling.
  • In a medium bowl, combine the thawed and squeezed dry spinach, crumbled feta cheese, softened cream cheese, Parmesan cheese, minced garlic, and dried oregano. Stir everything together until it's well combined. This is your delicious filling.
  • Season both sides of the pounded chicken breasts with salt and pepper. Don't be shy with the seasoning! Then, spread an even amount of the spinach and feta filling over one side of each chicken breast, leaving a small border around the edges.
  • Carefully roll up each chicken breast tightly, starting from one of the shorter ends. Secure the rolls with toothpicks if needed, though often they hold their shape well. This step might remind you of rolling up a holiday gift, a tradition I cherish with my son.
