- 2 cups cherry tomatoes
- 2 tablespoons olive oil
- Salt and pepper, to taste
- 8 ounces pasta (spaghetti or penne)
- 8 ounces burrata cheese
- Fresh basil leaves, for garnish
- Parmesan cheese, for serving (optional)
- 1-2 cloves garlic, minced (optional)
- Red pepper flakes (optional, for heat)
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a bowl, toss the cherry tomatoes with olive oil, salt, and pepper. Spread them out on the prepared baking sheet.
- Roast the tomatoes in the oven for about 20-25 minutes, or until they burst and caramelize. Keep an eye on them for that perfect golden color!
- While the tomatoes are roasting, cook the pasta according to package instructions until al dente. Reserve a cup of pasta water, then drain the rest.
- In a large skillet, combine the roasted tomatoes (with any juices), minced garlic, and cooked pasta. If needed, add a splash of reserved pasta water to create a light sauce.
- Remove from heat and gently fold in the burrata cheese. Allow it to melt slightly into the pasta.
- Serve hot, garnished with fresh basil and a sprinkle of Parmesan cheese, if desired.
