- 4 pieces chicken breasts (boneless, skinless)
- 2 cups cherry tomatoes (halved)
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon balsamic vinegar
- 8 ounces burrata cheese
- Fresh basil leaves (for garnish)
Instructions
- Preheat oven to 400°F (200°C).
- Season chicken with salt and pepper. Heat olive oil in an oven-safe skillet over medium-high heat and sear the chicken for 3-4 minutes on each side until golden brown.
- Add cherry tomatoes and balsamic vinegar to the skillet. Toss everything together, ensuring the tomatoes are evenly coated.
- Transfer the skillet to the preheated oven and roast for 20 minutes, or until the chicken is cooked through and tomatoes are soft and caramelized.
- Remove from the oven and immediately place burrata cheese over the hot chicken and tomatoes. Let it melt slightly.
- Garnish with fresh basil leaves before serving.
