- 2 cups cooked rice
- 1 cup shredded cooked chicken
- 1 cup cherry tomatoes, halved
- 1/2 cup shredded mozzarella cheese
- 1/3 cup fresh basil, chopped
- 2 tablespoons olive oil
- 2 teaspoons balsamic vinegar
- 1 teaspoon garlic powder

Instructions
- Preheat your oven to 375°F (190°C).
- In a mixing bowl, combine the cooked rice, shredded chicken, basil, mozzarella, garlic powder, olive oil, and balsamic vinegar.
- Season with salt and pepper to taste.
- Lightly grease a muffin tin.
- Press the mixture into the muffin cups, creating a cup shape.
- Top each cup with halved cherry tomatoes.
- Bake for 15-20 minutes, until golden and crispy.
- Let cool for a few minutes before removing from the tin.
