  • 1 cup shredded cooked chicken
  • 1 cup cherry tomatoes, halved
  • 1/2 cup shredded mozzarella cheese
  • 1/3 cup fresh basil, chopped
  • 2 tablespoons olive oil
  • 2 teaspoons balsamic vinegar
  • 1 teaspoon garlic powder
  • to taste salt and pepper

Instructions

  • Preheat your oven to 375°F (190°C).
  • In a mixing bowl, combine the cooked rice, shredded chicken, basil, mozzarella, garlic powder, olive oil, and balsamic vinegar.
  • Season with salt and pepper to taste.
  • Lightly grease a muffin tin.
  • Press the mixture into the muffin cups, creating a cup shape.
  • Top each cup with halved cherry tomatoes.
  • Bake for 15-20 minutes, until golden and crispy.
  • Let cool for a few minutes before removing from the tin.
