Instructions
- Preheat your oven to 425°F (220°C).
- Wash and peel the sweet potatoes. Cut them into 1/2-inch thick rounds.
- In a large bowl, toss the sweet potato rounds with olive oil, salt, pepper, and any additional spices.
- Spread the rounds in a single layer on a baking sheet lined with parchment paper.
- Roast in the oven for 20-25 minutes, flipping halfway through.
- Once out of the oven, sprinkle with fresh herbs for added flavor.
