- 8 oz linguine
- 2 large roasted red peppers
- 1 cup heavy cream
- 1 cup grated parmesan cheese
- 2 cloves garlic (minced)
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh basil or parsley for garnish (optional)
Instructions
- Start by cooking the linguine according to the package instructions. Make sure to salt the water well.
- While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about a minute until fragrant.
- Next, add the roasted red peppers to the skillet. If you’re using jarred peppers, just chop them up. Cook for about 3-4 minutes.
- Pour in the heavy cream, stirring to combine. Let it simmer for about 5 minutes or until it thickens slightly.
- Stir in the grated parmesan cheese, and mix until melted and creamy. Season with salt and pepper to taste.
- Once the linguine is cooked, drain it and add it to the skillet. Toss everything together until the pasta is well coated in the sauce.
- Serve hot, garnished with fresh basil or parsley if desired. Enjoy!
