  • 4 whole ripe peaches (halved and pitted)
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 6 cups mixed greens (like arugula and spinach)
  • 8 ounces burrata cheese
  • 1/4 cup balsamic glaze
  • fresh basil leaves (for garnish)

Instructions

  • Preheat your oven to 400°F (200°C).
  • In a bowl, toss the halved peaches with olive oil, salt, and pepper until evenly coated.
  • Place the peaches cut-side up on a baking sheet lined with parchment paper.
  • Roast in the oven for about 15-20 minutes, or until the peaches are soft and slightly caramelized.
  • While the peaches are roasting, prepare your salad base by arranging the mixed greens on a large serving platter.
  • Once the peaches are done, let them cool for a few minutes before placing them on top of the greens.
  • Carefully tear the burrata and place it in the center of the salad.
  • Drizzle the balsamic glaze over the entire salad and garnish with fresh basil leaves.
