- 4 whole ripe peaches (halved and pitted)
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 6 cups mixed greens (like arugula and spinach)
- 8 ounces burrata cheese
- 1/4 cup balsamic glaze
- fresh basil leaves (for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, toss the halved peaches with olive oil, salt, and pepper until evenly coated.
- Place the peaches cut-side up on a baking sheet lined with parchment paper.
- Roast in the oven for about 15-20 minutes, or until the peaches are soft and slightly caramelized.
- While the peaches are roasting, prepare your salad base by arranging the mixed greens on a large serving platter.
- Once the peaches are done, let them cool for a few minutes before placing them on top of the greens.
- Carefully tear the burrata and place it in the center of the salad.
- Drizzle the balsamic glaze over the entire salad and garnish with fresh basil leaves.
- Serve immediately and enjoy this summer delight!
