- 2 pounds baby potatoes (halved)
- 1 head garlic (roasted)
- 1/3 cup grated Parmesan cheese
- 1/4 cup olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons fresh parsley (chopped (for garnish))
Instructions
- Preheat your oven to 425°F (220°C).
- Cut the baby potatoes in half and place them in a large bowl.
- In a separate bowl, mash the roasted garlic into a paste and combine it with olive oil, salt, and pepper.
- Pour the garlic mixture over the potatoes and toss to coat evenly.
- Spread the potatoes in a single layer on a baking sheet lined with parchment paper.
- Roast for 25-30 minutes, or until they’re golden brown and crispy. Halfway through, give them a stir for even roasting.
- Once done, remove from the oven and sprinkle with Parmesan cheese.
- Return to the oven for an additional 5 minutes until the cheese is melted and bubbly.
- Garnish with fresh parsley before serving.
