Deliciously crispy and cheesy, these roasted garlic Parmesan potatoes are the perfect side dish for any meal!

  • 2 pounds baby potatoes (halved)
  • 1 head garlic (roasted)
  • 1/3 cup grated Parmesan cheese
  • 1/4 cup olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh parsley (chopped (for garnish))

Instructions

  • Preheat your oven to 425°F (220°C).
  • Cut the baby potatoes in half and place them in a large bowl.
  • In a separate bowl, mash the roasted garlic into a paste and combine it with olive oil, salt, and pepper.
  • Pour the garlic mixture over the potatoes and toss to coat evenly.
  • Spread the potatoes in a single layer on a baking sheet lined with parchment paper.
  • Roast for 25-30 minutes, or until they’re golden brown and crispy. Halfway through, give them a stir for even roasting.
  • Once done, remove from the oven and sprinkle with Parmesan cheese.
  • Return to the oven for an additional 5 minutes until the cheese is melted and bubbly.
  • Garnish with fresh parsley before serving.
