- 4 medium carrots (peeled and cut into sticks)

- 4 ounces feta cheese (crumbled)
- 1/4 cup cream cheese (softened)
- 1 tablespoon lemon juice
- 4 slices bread ((sourdough works great!))
- Fresh herbs ((like dill or parsley) for garnish)
Instructions
- Preheat your oven to 425°F (220°C). This high heat will help caramelize the carrots nicely.
- In a bowl, toss the carrot sticks with olive oil, salt, and pepper. If you're feeling adventurous, add honey for a sweet glaze.
- Spread the carrots on a baking sheet in a single layer. Roast them for about 20-25 minutes or until they’re tender and slightly caramelized. Flip them halfway through for even cooking.
- While the carrots roast, prepare the whipped feta. In a food processor, combine feta cheese, cream cheese, and lemon juice. Blend until smooth and creamy.
- Toast your bread slices until golden brown. I love using a toaster oven or a grill for extra flavor.
- Once the carrots are done, let them cool slightly, then layer them over the whipped feta on each slice of toast.
- Garnish with fresh herbs before serving. Enjoy your creation right away!
