  • 1 tablespoon lemon juice
  • 4 slices bread ((sourdough works great!))

Instructions

  • Preheat your oven to 425°F (220°C). This high heat will help caramelize the carrots nicely.
  • In a bowl, toss the carrot sticks with olive oil, salt, and pepper. If you're feeling adventurous, add honey for a sweet glaze.
  • Spread the carrots on a baking sheet in a single layer. Roast them for about 20-25 minutes or until they’re tender and slightly caramelized. Flip them halfway through for even cooking.
  • While the carrots roast, prepare the whipped feta. In a food processor, combine feta cheese, cream cheese, and lemon juice. Blend until smooth and creamy.
