  • 3 medium-sized beets (roasted and sliced)
  • 4 cups mixed greens (spinach, arugula, or field greens)
  • 1/2 cup goat cheese (crumbled)
  • 1/2 cup walnuts or pecans (toasted)
  • 1/4 cup red onion (thinly sliced)
  • 1/4 cup balsamic vinegar
  • 1/4 cup olive oil
  • Salt and pepper (to taste)

Instructions

  • Preheat your oven to 400°F (200°C). Wrap the beets in aluminum foil and roast for about 45-60 minutes, or until tender. Let them cool before peeling and slicing.
  • While the beets are roasting, prepare the dressing. Whisk together the balsamic vinegar and olive oil in a bowl. Season with salt and pepper to taste.
  • In a large salad bowl, combine the mixed greens, sliced beets, red onion, and nuts.
  • Drizzle the dressing over the salad and toss gently to combine.
  • Finally, sprinkle the crumbled goat cheese on top and serve immediately.
