- 8 oz pasta (spaghetti or penne work great)
- 1 cup ricotta cheese
- 1/2 cup fresh basil leaves (chopped)
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic (minced)
- 1 tablespoon olive oil
- Salt and pepper (to taste)
- Optional (cherry tomatoes or spinach for added flavor)
Instructions
- Start by boiling a pot of salted water. Add the pasta and cook according to package instructions until al dente, usually about 8-10 minutes.
- While the pasta cooks, heat a tablespoon of olive oil in a pan over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Once the pasta is cooked, reserve about 1/2 cup of pasta water, then drain the rest. Add the hot pasta to the pan with garlic.
- Stir in the ricotta cheese, chopped basil, and Parmesan cheese. If the mixture seems dry, add a bit of reserved pasta water until you reach your desired creaminess.
- Season with salt and pepper to taste. If you’re adding spinach or cherry tomatoes, toss them in at this stage to warm slightly.
- Serve your pasta bowl hot, garnished with extra basil and Parmesan if desired.
