- 1 cup uncooked jasmine rice
- 1 pound shrimp, peeled and deveined
- 1 ½ cups fresh pineapple, diced
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 2 stalks green onions, sliced
- Salt and pepper to taste
- Optional: lime wedges for serving
Instructions
- Cook the jasmine rice according to package instructions, about 15 minutes. Set aside.
- In a large skillet, heat the sesame oil over medium heat. Add minced garlic and ginger, sauté for 1 minute.
- Add shrimp to the skillet and cook until pink, about 3-4 minutes.
- Stir in diced pineapple and cook for an additional 2 minutes.
- Add cooked rice and soy sauce to the skillet. Toss everything together.
- Garnish with sliced green onions and serve with lime wedges.
