  • 1 cup uncooked jasmine rice
  • 1 pound shrimp, peeled and deveined
  • 1 ½ cups fresh pineapple, diced
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 2 stalks green onions, sliced
  • Salt and pepper to taste
  • Optional: lime wedges for serving

Instructions

  • Cook the jasmine rice according to package instructions, about 15 minutes. Set aside.
  • In a large skillet, heat the sesame oil over medium heat. Add minced garlic and ginger, sauté for 1 minute.
  • Add shrimp to the skillet and cook until pink, about 3-4 minutes.
  • Stir in diced pineapple and cook for an additional 2 minutes.
  • Add cooked rice and soy sauce to the skillet. Toss everything together.
  • Garnish with sliced green onions and serve with lime wedges.
