- 8 ounces of corned beef, thinly sliced
- 8 ounces of Swiss cheese, sliced
- 1 cup of sauerkraut, drained well
- 1/2 cup of Russian or Thousand Island dressing
- 4 large flour tortillas
- Fresh parsley, chopped (for garnish)
Instructions
- Gather all your ingredients.
- Spread 2 tablespoons of dressing on a tortilla.
- Layer corned beef, Swiss cheese, and sauerkraut on top of the dressing.
- Roll the tortilla tightly from one end.
- In a skillet, sear the roll ups seam-side down for 2-3 minutes on each side until golden brown.
- Remove from skillet, cool slightly, and slice into bite-sized pieces.
Notes
- Serve with extra dressing for dipping.
- Can be made ahead and reheated in the skillet.
