  • Total Time: 35 minutes
  • Yield: 20 balls

Ingredients

Scale
  • 2 cups corned beef, chopped
  • 1 cup sauerkraut, drained and squeezed dry
  • 1 cup Swiss cheese, shredded
  • 1/2 cup thousand island dressing
  • 1 cup breadcrumbs (Panko works great!)
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. In a bowl, combine corned beef, sauerkraut, Swiss cheese, and thousand island dressing.
  2. Roll the mixture into tablespoon-sized balls.
  3. Set up a breading station with flour, beaten eggs, and breadcrumbs. Coat each ball in flour, egg, and breadcrumbs.
  4. Heat oil in a skillet over medium-high heat.
  5. Fry the balls in hot oil for 3-4 minutes until golden brown, flipping as needed.
  6. Drain on paper towels and serve warm with thousand island dressing.

Notes

  • Ensure the oil is hot enough before frying for crispy results.
  • Kids can help roll the balls, making it a fun family activity.
