- 2 large eggs
- Salt and pepper to taste
- Oil for frying
Instructions
- In a bowl, combine corned beef, sauerkraut, Swiss cheese, and thousand island dressing.
- Roll the mixture into tablespoon-sized balls.
- Set up a breading station with flour, beaten eggs, and breadcrumbs. Coat each ball in flour, egg, and breadcrumbs.
- Heat oil in a skillet over medium-high heat.
- Fry the balls in hot oil for 3-4 minutes until golden brown, flipping as needed.
- Drain on paper towels and serve warm with thousand island dressing.
