- 12 oz rotini or fusilli pasta
- 1 cup cherry tomatoes, halved
- 1 cup fresh blueberries
- 8 oz mozzarella balls, halved
- 1/4 cup fresh basil, chopped
- 1/4 cup olive oil
- 2 tablespoons balsamic vinegar
- to taste Salt
- to taste Pepper
- optional 1/4 cup feta cheese, crumbled
Instructions
- Cook the pasta according to package instructions. Drain and rinse under cold water.
- In a large bowl, combine cooked pasta, cherry tomatoes, blueberries, mozzarella, and basil.
- In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper.
- Pour the dressing over the pasta mixture and toss gently.
- Chill in the refrigerator for at least 30 minutes before serving.
