Ingredients
Scale
- 1 cup unsalted butter
- 2 cups granulated sugar
- 4 large eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1/2 cup cocoa powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 tablespoon red food coloring
- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract (for cheesecake layer)
- 1 cup crushed Oreos (plus more for topping)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan.
- In a medium saucepan, melt the butter over low heat. Once melted, remove from heat and stir in the sugar until well combined.
- Add in the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract and red food coloring.
- In another bowl, whisk together the flour, cocoa powder, baking soda, and salt. Gradually mix the dry ingredients into the wet mixture until just combined.
- Pour half of the brownie batter into the prepared pan and spread evenly.
- In a separate bowl, beat the cream cheese, powdered sugar, and vanilla extract until smooth. Fold in the crushed Oreos.
- Spread the cream cheese mixture over the brownie layer, then dollop the remaining brownie batter on top. Use a knife to swirl the two layers together.
- Bake for 30-35 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs. Let cool before slicing.
