A quick and healthy breakfast option that combines rolled oats, almond milk, and fresh raspberries.

  • 1 cup rolled oats
  • 2 cups almond milk
  • 1 cup fresh raspberries
  • 1 tablespoon almond butter
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • a pinch salt
  • for topping sliced almonds (optional)

Instructions

  • In a medium bowl, combine rolled oats, almond milk, almond butter, honey (or maple syrup), vanilla extract, and a pinch of salt. Stir until well combined.
  • Add the fresh raspberries gently, being careful not to mash them too much.
  • Pour the mixture into individual jars or containers. Cover tightly with lids.
  • Refrigerate overnight, or for at least 4 hours, to let the oats soak up the liquid.
  • In the morning, give the oats a good stir, and top with sliced almonds and additional raspberries, if desired.
