- 1 cup rolled oats
- 2 cups almond milk
- 1 cup fresh raspberries
- 1 tablespoon almond butter
- 2 tablespoons honey or maple syrup
- 1 teaspoon vanilla extract
- a pinch salt
- for topping sliced almonds (optional)
Instructions
- In a medium bowl, combine rolled oats, almond milk, almond butter, honey (or maple syrup), vanilla extract, and a pinch of salt. Stir until well combined.
- Add the fresh raspberries gently, being careful not to mash them too much.
- Pour the mixture into individual jars or containers. Cover tightly with lids.
- Refrigerate overnight, or for at least 4 hours, to let the oats soak up the liquid.
- In the morning, give the oats a good stir, and top with sliced almonds and additional raspberries, if desired.
