  • 2 cups uncooked long-grain white rice
  • 4 cups chicken broth
  • 1 lb boneless, skinless chicken breasts
  • 1 packet (1 oz) ranch dressing mix
  • 1 cup frozen mixed vegetables
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)

Instructions

  • Start by cutting the chicken breasts into bite-sized pieces. Season with salt and pepper.
  • In a large pot or skillet, heat the olive oil over medium heat. Add the chicken pieces and cook until browned, about 5-7 minutes.
  • Stir in the rice, ranch dressing mix, and chicken broth. Bring it to a boil.
  • Once boiling, add the frozen mixed vegetables. Reduce the heat to low and cover the pot.
  • Let it simmer for about 18-20 minutes, or until the rice is tender and the liquid is absorbed.
  • If you’re using cheese, sprinkle it on top during the last few minutes of cooking.
  • Fluff the rice with a fork and serve warm.
