This quick and easy bacon fried rice is packed with flavor and perfect for a weeknight dinner.

Ingredients

  • 2 cups of cooked rice (preferably day-old)
  • 4 strips of bacon, chopped
  • 1 cup of mixed vegetables (peas, carrots, and corn work great)
  • 2 eggs, beaten
  • 3 tablespoons of soy sauce
  • 2 green onions, chopped
  • 1 tablespoon of sesame oil (optional)
  • Salt and pepper to taste

Instructions

  1. Cook chopped bacon in a skillet over medium heat until crispy, about 5 minutes.
  2. Push bacon to the side and scramble beaten eggs in the empty space until cooked, about 2 minutes.
  3. Add mixed vegetables and stir for 3-4 minutes until heated through.
  4. Add cooked rice, breaking up clumps and mixing well.
  5. Pour in soy sauce and sesame oil, mixing until rice is coated, about 2 minutes.
  6. Stir in green onions and season with salt and pepper before serving.

Notes

  • Using day-old rice prevents the dish from becoming mushy.
  • Feel free to customize the vegetables based on your preference.
