- 2 cups of cooked rice (preferably day-old)
- 4 strips of bacon, chopped
- 1 cup of mixed vegetables (peas, carrots, and corn work great)
- 2 eggs, beaten
- 3 tablespoons of soy sauce
- 2 green onions, chopped
- 1 tablespoon of sesame oil (optional)
- Salt and pepper to taste
Instructions
- Cook chopped bacon in a skillet over medium heat until crispy, about 5 minutes.
- Push bacon to the side and scramble beaten eggs in the empty space until cooked, about 2 minutes.
- Add mixed vegetables and stir for 3-4 minutes until heated through.
- Add cooked rice, breaking up clumps and mixing well.
- Pour in soy sauce and sesame oil, mixing until rice is coated, about 2 minutes.
- Stir in green onions and season with salt and pepper before serving.
Notes
- Using day-old rice prevents the dish from becoming mushy.
- Feel free to customize the vegetables based on your preference.
