  • 1 cup grated zucchini (about 1 medium zucchini)
  • 1 cup canned pumpkin puree
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil (or melted coconut oil)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1/2 cup chopped walnuts (or chocolate chips (optional))

Instructions

  • Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
  • In a large bowl, mix the grated zucchini, pumpkin puree, granulated sugar, brown sugar, oil, eggs, and vanilla extract until well combined.
  • In another bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  • Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix!
  • If desired, fold in the walnuts or chocolate chips.
  • Pour the batter into the prepared loaf pan and smooth the top.
  • Bake for about 60-70 minutes, or until a toothpick inserted in the center comes out clean.
  • Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
