- 1 tablespoon vegetable oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 6 cups chicken or vegetable broth
- 1 pack (about 12 oz) frozen potstickers
- 2 cups mushrooms, sliced
- 2 cups bok choy, chopped
- 2 tablespoons soy sauce
- 1 teaspoon sesame oil
- to taste Salt and pepper
- for garnish Green onions, sliced
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and grated ginger, stirring for another minute until fragrant.
- Pour in the chicken or vegetable broth and bring to a simmer.
- Once the broth is simmering, gently add the frozen potstickers. Let them cook according to the package instructions, usually around 6-8 minutes.
- Next, add the sliced mushrooms and chopped bok choy. Cook for another 3-5 minutes until the mushrooms are tender and the bok choy is wilted.
- Stir in the soy sauce and sesame oil. Taste and adjust seasoning with salt and pepper if needed.
- Serve hot, garnished with sliced green onions.
