  • 1 tablespoon vegetable oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 6 cups chicken or vegetable broth
  • 1 pack (about 12 oz) frozen potstickers
  • 2 cups mushrooms, sliced
  • 2 cups bok choy, chopped
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • to taste Salt and pepper
  • for garnish Green onions, sliced

Instructions

  • In a large pot, heat the vegetable oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  • Add the minced garlic and grated ginger, stirring for another minute until fragrant.
  • Pour in the chicken or vegetable broth and bring to a simmer.
  • Once the broth is simmering, gently add the frozen potstickers. Let them cook according to the package instructions, usually around 6-8 minutes.
  • Next, add the sliced mushrooms and chopped bok choy. Cook for another 3-5 minutes until the mushrooms are tender and the bok choy is wilted.
  • Stir in the soy sauce and sesame oil. Taste and adjust seasoning with salt and pepper if needed.
  • Serve hot, garnished with sliced green onions.
