- 1 cup unsalted butter (softened)
- 1 cup granulated sugar
- 1 cup light brown sugar (packed)
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup chopped pistachios (unsalted)
- 1/2 cup white chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add the eggs and vanilla extract. Mix until combined.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Gradually mix the dry ingredients into the wet ingredients until just combined.
- Fold in the chopped pistachios and white chocolate chips, if using.
- Using a cookie scoop, drop dough onto the prepared baking sheet, leaving some space between each cookie.
- Bake for 10-12 minutes or until the edges are golden but the centers remain soft.
- Remove from the oven and let cool on the baking sheet for a few minutes before transferring them to a wire rack.
