  • 1 cup unsalted butter (softened)
  • 1 cup granulated sugar
  • 1 cup light brown sugar (packed)
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chopped pistachios (unsalted)
  • 1/2 cup white chocolate chips (optional)

Instructions

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  • Add the eggs and vanilla extract. Mix until combined.
  • In a separate bowl, whisk together the flour, baking soda, and salt.
  • Gradually mix the dry ingredients into the wet ingredients until just combined.
  • Fold in the chopped pistachios and white chocolate chips, if using.
  • Using a cookie scoop, drop dough onto the prepared baking sheet, leaving some space between each cookie.
  • Bake for 10-12 minutes or until the edges are golden but the centers remain soft.
  • Remove from the oven and let cool on the baking sheet for a few minutes before transferring them to a wire rack.
