- 2 cups cooked white rice (or brown rice if you prefer)
- 1 lb boneless, skinless chicken breast (diced)
- 1 can pineapple chunks (20 oz, drained)
- 1 red bell pepper (diced)
- 1 green bell pepper (diced)
- 3 tablespoons soy sauce
- 1 tablespoon olive oil
- 2 cloves garlic (minced)
- Salt and pepper (to taste)
- Optional (chopped green onions and sesame seeds for garnish)
Instructions
- Start by cooking your rice according to package instructions. Set aside once done.
- Heat olive oil in a large skillet over medium heat. Add the diced chicken and season with salt and pepper.
- Cook the chicken for about 5-7 minutes, or until browned and cooked through. Stir occasionally.
- Add minced garlic, red and green bell peppers to the skillet. Sauté for another 3-4 minutes until the peppers are tender.
- Pour in the drained pineapple chunks and soy sauce. Stir well to combine all ingredients.
- Let it simmer for 2-3 minutes so the flavors meld together.
- Finally, add the cooked rice to the skillet. Mix everything until well combined and heated through.
- Garnish with chopped green onions and sesame seeds, if desired. Serve hot!
