  • 2 cups cooked white rice (or brown rice if you prefer)
  • 1 lb boneless, skinless chicken breast (diced)
  • 1 can pineapple chunks (20 oz, drained)
  • 1 red bell pepper (diced)
  • 1 green bell pepper (diced)
  • 3 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 2 cloves garlic (minced)
  • Salt and pepper (to taste)
  • Optional (chopped green onions and sesame seeds for garnish)

Instructions

  • Start by cooking your rice according to package instructions. Set aside once done.
  • Heat olive oil in a large skillet over medium heat. Add the diced chicken and season with salt and pepper.
  • Cook the chicken for about 5-7 minutes, or until browned and cooked through. Stir occasionally.
  • Add minced garlic, red and green bell peppers to the skillet. Sauté for another 3-4 minutes until the peppers are tender.
  • Pour in the drained pineapple chunks and soy sauce. Stir well to combine all ingredients.
  • Let it simmer for 2-3 minutes so the flavors meld together.
  • Finally, add the cooked rice to the skillet. Mix everything until well combined and heated through.
  • Garnish with chopped green onions and sesame seeds, if desired. Serve hot!
