- 4 large russet potatoes
- 2 tbsp olive oil
- 1 lb thinly sliced beef steak (ribeye or sirloin)
- 1 green bell pepper, sliced
- 1 onion, sliced
- 8 oz mushrooms, sliced
- 2 cloves garlic, minced
- Salt and pepper, to taste
- 8 slices provolone cheese
- 2 tbsp butter
- ½ cup sour cream (optional)
- Fresh parsley, chopped (for garnish)
Instructions
- Prepare the potatoes:
- Preheat oven to 400°F (200°C).
- Scrub the potatoes clean, then pierce each potato a few times with a fork. Rub the potatoes with olive oil and sprinkle with salt.
- Place the potatoes on a baking sheet and bake for 1 hour, or until tender when pierced with a fork. Remove from oven and let cool slightly.
- Prepare the steak and veggies:
- While the potatoes are baking, heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
- Add the sliced onions, bell pepper, and mushrooms. Cook until they begin to soften, about 5-6 minutes.
- Push the vegetables to one side of the skillet, add the sliced beef to the other side, and season with salt and pepper. Cook the beef until no longer pink, about 4-5 minutes. Add the minced garlic and stir to combine everything. Cook for an additional 1-2 minutes.
- Assemble the baked potatoes:
- Cut a slit down the center of each baked potato and gently press the sides to open them up. Fluff the inside of the potatoes with a fork and add a bit of butter.
- Divide the steak and veggie mixture evenly among the potatoes, stuffing them generously.
- Top each stuffed potato with 2 slices of provolone cheese.
- Melt the cheese:
- Place the stuffed potatoes on a baking sheet and return to the oven for 5-7 minutes, or until the cheese is melted and bubbly.
- Serve:
- Serve the Philly Cheesesteak Baked Potatoes hot, topped with a dollop of sour cream and chopped parsley, if desired.
Notes
- You can use cheddar or mozzarella cheese if you prefer a different cheese flavor.
- For a quicker option, microwave the potatoes instead of baking, until tender.
