  • 1 cup cooked chicken (Shredded (leftover or rotisserie works great))
  • 1/2 cup pesto (Homemade or store-bought)
  • 1 cup mozzarella cheese (Shredded)
  • 1/4 cup cherry tomatoes (Halved (optional))
  • Salt and pepper (To taste)
  • Olive oil (For drizzling (optional))

Instructions

  • Preheat your oven to 400°F (200°C).
  • Spread the pesto evenly over the flatbread, leaving a small border around the edges.
  • Top with shredded chicken, then sprinkle the mozzarella cheese over the top.
  • If using, scatter the halved cherry tomatoes on top and season with a pinch of salt and pepper.
  • Drizzle a little olive oil over everything for extra flavor.
  • Place the flatbread on a baking sheet and bake for about 10-12 minutes, or until the cheese is bubbly and golden.
