- 2 ¾ cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon salt
- 1 cup unsalted butter, softened
- 1 ½ cups granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 teaspoon almond extract (optional)

- as needed Colored sprinkles (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a large mixing bowl, cream the softened butter and sugar until light and fluffy. This takes about 3-5 minutes.
- Add the egg, vanilla extract, and almond extract (if using) to the butter mixture and mix until combined.
- Gradually add the flour mixture to the wet ingredients, mixing until the dough comes together.
- Divide the dough in half and shape each half into a log about 1 inch in diameter. Wrap in plastic wrap and chill for at least 30 minutes.
- Once chilled, slice the dough into ¼-inch thick rounds and shape them into pencil forms, pointed at one end and flat at the other.
- Place the cookies on the prepared baking sheet and bake for 10-12 minutes or until the edges are lightly golden.
- Let the cookies cool completely on a wire rack before decorating.
