  • 1 cup brown sugar (packed)
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 cups rolled oats

Instructions

  • Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  • In a large mixing bowl, combine the peanut butter, brown sugar, and granulated sugar. Mix until creamy.
  • Add the eggs and vanilla extract to the mixture. Beat until smooth and well combined.
  • In another bowl, whisk together the flour, baking soda, and salt. Gradually add this dry mixture to the wet ingredients.
  • Stir in the rolled oats until evenly distributed.
  • Scoop tablespoon-sized balls of dough onto the prepared baking sheets, spacing them about two inches apart.
  • Bake for 10-12 minutes, until the edges are lightly golden. The cookies will appear soft in the center.
  • Remove from the oven and let them cool on the baking sheet for about 5 minutes before transferring them to a wire rack.
  • For the cream filling, beat together powdered sugar, butter, and vanilla until smooth. Spread filling on the flat side of one cookie and sandwich with another.
