- 1 cup creamy peanut butter
- 1 cup brown sugar (packed)
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 3 cups rolled oats
Instructions
- Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a large mixing bowl, combine the peanut butter, brown sugar, and granulated sugar. Mix until creamy.
- Add the eggs and vanilla extract to the mixture. Beat until smooth and well combined.
- In another bowl, whisk together the flour, baking soda, and salt. Gradually add this dry mixture to the wet ingredients.
- Stir in the rolled oats until evenly distributed.
- Scoop tablespoon-sized balls of dough onto the prepared baking sheets, spacing them about two inches apart.
- Bake for 10-12 minutes, until the edges are lightly golden. The cookies will appear soft in the center.
- Remove from the oven and let them cool on the baking sheet for about 5 minutes before transferring them to a wire rack.
- For the cream filling, beat together powdered sugar, butter, and vanilla until smooth. Spread filling on the flat side of one cookie and sandwich with another.
