Delicious and nutritious peanut butter oat cups that are perfect for breakfast or a snack! Easy to make and customize.

  • 2 cups rolled oats
  • 1 cup creamy peanut butter
  • 1/2 cup honey
  • 1/4 cup dark chocolate chips (optional but highly recommended!)
  • 1/2 tsp vanilla extract
  • 1/4 tsp salt

Instructions

  • Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners.
  • In a large mixing bowl, combine the rolled oats, peanut butter, honey, vanilla extract, and salt. Mix until well combined.
  • Fold in chocolate chips or any other mix-ins you prefer.
  • Scoop a tablespoon of the mixture into each muffin cup. Press down firmly.
  • Bake for 10-12 minutes, or until the edges are golden brown.
  • Allow them to cool in the pan for 5 minutes, then transfer to a wire rack.
