- 2 cups rolled oats
- 1 cup creamy peanut butter
- 1/2 cup honey
- 1/4 cup dark chocolate chips (optional but highly recommended!)
- 1/2 tsp vanilla extract
- 1/4 tsp salt
Instructions
- Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners.
- In a large mixing bowl, combine the rolled oats, peanut butter, honey, vanilla extract, and salt. Mix until well combined.
- Fold in chocolate chips or any other mix-ins you prefer.
- Scoop a tablespoon of the mixture into each muffin cup. Press down firmly.
- Bake for 10-12 minutes, or until the edges are golden brown.
- Allow them to cool in the pan for 5 minutes, then transfer to a wire rack.
