  • 1/2 cup unsalted butter (softened)
  • 1 cup brown sugar (packed)
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 cups mini marshmallows
  • 1/2 cup chocolate chips (optional)

Instructions

  • Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  • In a large mixing bowl, cream together the peanut butter, softened butter, brown sugar, and granulated sugar until smooth.
  • Add the eggs and vanilla extract, mixing until well combined.
  • In another bowl, whisk together the flour, baking soda, and salt. Gradually add this to the peanut butter mixture.
  • Fold in the mini marshmallows and chocolate chips if using.
  • Spread the batter evenly in the prepared baking dish.
  • Bake for 20-25 minutes, or until golden brown and a toothpick comes out clean.
  • Let cool for 10 minutes before cutting into squares.
