  • 4 ripe peaches, sliced
  • 1/2 cup unsalted butter
  • 1 cup brown sugar
  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 2 large eggs

Instructions

  • Preheat your oven to 350°F (175°C).
  • In a 9-inch round cake pan, melt the butter over low heat. Once melted, sprinkle brown sugar evenly over the butter.
  • Arrange the peach slices on top of the brown sugar mixture. Set aside.
  • In a mixing bowl, combine flour, granulated sugar, baking powder, and salt. Stir to mix well.
  • In another bowl, whisk together milk, eggs, and vanilla until well combined.
  • Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Be careful not to overmix.
  • Pour the batter over the peaches in the pan, spreading it evenly.
  • Bake in the preheated oven for about 40-45 minutes, or until a toothpick inserted in the center comes out clean.
  • Allow the cake to cool for about 10 minutes, then invert onto a serving platter. Enjoy!
