  • 1 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 cup milk
  • 2 cups diced fresh peaches
  • 1 teaspoon vanilla extract

Instructions

  • Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or spray with cooking spray.
  • In a bowl, whisk together the flour, sugar, baking powder, and salt.
  • In another bowl, beat the eggs, then add the oil, milk, and vanilla extract. Mix until combined.
  • Pour the wet ingredients into the dry ingredients. Mix gently until just combined.
  • Gently fold in the diced peaches until evenly distributed.
  • Spoon the batter into each muffin cup, filling them about 2/3 full.
  • Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
  • Let the muffins cool for a few minutes in the pan, then transfer to a wire rack.
