- 2 cups all-purpose flour
- 1 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 2 large eggs
- 1/2 cup vegetable oil
- 1 cup milk
- 2 cups diced fresh peaches
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or spray with cooking spray.
- In a bowl, whisk together the flour, sugar, baking powder, and salt.
- In another bowl, beat the eggs, then add the oil, milk, and vanilla extract. Mix until combined.
- Pour the wet ingredients into the dry ingredients. Mix gently until just combined.
- Gently fold in the diced peaches until evenly distributed.
- Spoon the batter into each muffin cup, filling them about 2/3 full.
- Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
- Let the muffins cool for a few minutes in the pan, then transfer to a wire rack.
