Instructions
- Wash, peel, and dice the peaches to get about 4 cups.
- Combine peaches, sugar, and lemon juice in a large pot; let sit for 10 minutes.
- Add pectin, bring to a boil, and stir for 1-2 minutes.
- Check jam consistency by dropping a spoonful on a cold plate.
- Ladle jam into sterilized jars, leaving 1/4 inch headspace.
- Process jars in a boiling water bath for 5-10 minutes, then cool.
