- 6 ripe peaches, peeled and sliced
- 1 cup granulated sugar
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 cup rolled oats
- 1/2 cup packed brown sugar
- 1/2 teaspoon cinnamon
- 1/2 cup unsalted butter, melted
- pinch of salt
Instructions
- Preheat your oven to 350°F (175°C). Grease a baking dish.
- In a bowl, combine sliced peaches, sugar, lemon juice, and vanilla. Stir gently and let it sit for 10 minutes.
- In another bowl, mix flour, oats, brown sugar, cinnamon, and salt. Add melted butter and stir until combined.
- Spread the peach mixture in the baking dish. Top with the oat mixture.
- Bake for 30-35 minutes until golden brown and bubbly.
- Cool for 10 minutes before serving.
