- 2 cups fresh peaches, diced (or frozen peaches, thawed)
- 1/2 cup brown sugar
- 1/4 cup rolled oats
- 1/4 cup flour (for crumble topping)
- 1 teaspoon ground cinnamon (for crumble topping)
- 1/4 cup cold butter, diced (for crumble topping)
Instructions
- Preheat your oven to 350°F (175°C) and grease a donut pan.
- In a large bowl, mix together flour, sugar, baking powder, salt, and cinnamon.
- In another bowl, whisk together milk, melted butter, egg, and vanilla extract.
- Combine the wet and dry ingredients until just mixed; do not overmix.
- In a separate bowl, mix diced peaches with brown sugar and set aside.
- In a small bowl, combine oats, flour, cinnamon, and diced cold butter to create the crumble topping.
- Fill each donut cavity halfway with batter, add a spoonful of the peach mixture, and top with more batter until full.
- Sprinkle the crumble topping generously over each donut.
- Bake for 15-18 minutes or until golden brown and a toothpick comes out clean.
- Let cool in the pan for about 5 minutes before transferring to a wire rack.
