- 2 cups fresh peaches, peeled and diced (about 4 medium peaches)
- 1/2 cup granulated sugar
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup unsalted butter, softened
- 1 cup brown sugar, packed
- 1 large egg
- 1 teaspoon cinnamon (optional for a little extra warmth)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan.
- In a bowl, combine diced peaches, 1/4 cup of sugar, lemon juice, and vanilla extract. Set aside.
- In another bowl, whisk together flour, baking powder, salt, and cinnamon.
- In a big mixing bowl, cream together softened butter and brown sugar until fluffy. Add the egg and mix well.
- Gradually add the dry ingredients to the butter mixture until combined.
- Press about two-thirds of the crumb mixture into the bottom of the prepared pan.
- Spread the peach mixture evenly over the crust. Crumble the remaining crust mixture on top.
- Bake for 35-40 minutes or until the top is golden brown. Let it cool completely before slicing.
