- 4 medium ripe peaches (peeled and diced)
- 1/4 cup sugar (adjust for sweetness)
- 1 tsp vanilla extract
- 1 tsp lemon juice
- 2 cups vanilla ice cream (or your favorite flavor)
- 1 cup crushed graham crackers (for topping)
- 1 tsp cinnamon (optional)
- Fresh mint leaves for garnish (optional)
Instructions
- In a medium bowl, combine the diced peaches, sugar, vanilla extract, and lemon juice. Let this mixture sit for about 10 minutes to allow the flavors to meld.
- Layer the bottom of your cups with about 1-2 tablespoons of the peach mixture.
- Scoop a generous portion of vanilla ice cream on top of the peaches. You can use an ice cream scoop for a perfect round shape.
- Add another layer of the peach mixture over the ice cream, followed by more ice cream if desired.
- Sprinkle crushed graham crackers on top for that cobbler effect. You can also add a sprinkle of cinnamon for extra flavor.
- Garnish with fresh mint leaves if you want to impress your guests. Serve immediately or freeze for later!
