  • 2 cups crushed graham crackers
  • 1/2 cup unsalted butter, melted
  • 1/4 cup sugar
  • 16 oz cream cheese, softened
  • 1 cup sugar (for the filling)
  • 1 tsp vanilla extract
  • 2 large eggs
  • 3 cups fresh peaches, peeled and sliced (or 2 cans of peaches)
  • 1 tsp cinnamon
  • 1/4 cup brown sugar
  • 1 tbsp lemon juice

Instructions

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, combine crushed graham crackers, melted butter, and 1/4 cup sugar. Press this mixture firmly into the bottom of a greased 9×13 inch baking dish to form a crust.
  • In another bowl, beat the cream cheese until smooth. Gradually add 1 cup of sugar and continue to mix.
  • Add vanilla extract and eggs, one at a time, mixing until just combined. Avoid overmixing.
  • Pour the cream cheese mixture over the crust and spread it evenly.
  • In a separate bowl, mix sliced peaches with cinnamon, brown sugar, and lemon juice. Spoon the peach mixture over the cheesecake layer.
  • Bake for 35-40 minutes, or until the center is set and the edges are lightly browned.
  • Let them cool at room temperature before refrigerating for at least 2 hours to set.
  • Cut into squares and enjoy!
