- 2 cups crushed graham crackers
- 1/2 cup unsalted butter, melted
- 1/4 cup sugar
- 16 oz cream cheese, softened
- 1 cup sugar (for the filling)
- 1 tsp vanilla extract
- 2 large eggs
- 3 cups fresh peaches, peeled and sliced (or 2 cans of peaches)
- 1 tsp cinnamon
- 1/4 cup brown sugar
- 1 tbsp lemon juice
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine crushed graham crackers, melted butter, and 1/4 cup sugar. Press this mixture firmly into the bottom of a greased 9×13 inch baking dish to form a crust.
- In another bowl, beat the cream cheese until smooth. Gradually add 1 cup of sugar and continue to mix.
- Add vanilla extract and eggs, one at a time, mixing until just combined. Avoid overmixing.
- Pour the cream cheese mixture over the crust and spread it evenly.
- In a separate bowl, mix sliced peaches with cinnamon, brown sugar, and lemon juice. Spoon the peach mixture over the cheesecake layer.
- Bake for 35-40 minutes, or until the center is set and the edges are lightly browned.
- Let them cool at room temperature before refrigerating for at least 2 hours to set.
- Cut into squares and enjoy!
