Ingredients
Scale
- 2 ripe peaches (sliced)
- 1 ball burrata cheese (about 8 ounces)
- 1 cup fresh basil leaves
- 2 cups arugula (or mixed greens)
- 1/4 cup balsamic glaze (store-bought or homemade)
- Salt and pepper (to taste)
- Optional (a handful of toasted pine nuts or walnuts for crunch)
Instructions
- Begin by preparing your ingredients. Slice the peaches into thin wedges and set them aside.
- In a large bowl, combine the arugula (or mixed greens) with the sliced peaches. Gently toss to combine.
- Next, tear the burrata into pieces and add it to the bowl. Don’t worry about making it look perfect; the creaminess will blend beautifully with the rest of the salad.
- Add the fresh basil leaves, and if you’re using them, sprinkle in the toasted nuts for a nice crunch.
- Drizzle the balsamic glaze over the salad, and season with salt and pepper to taste. Toss everything together gently so you don’t break the burrata too much.
- Serve immediately and enjoy the explosion of flavors in each bite!
