- 6 large eggs
- 1/4 cup mayonnaise
- 1 teaspoon Dijon mustard
- to taste Salt
- to taste Pepper
- a few drops Red food coloring
- a few drops Blue food coloring
- as needed Fresh parsley or chives for garnish
Instructions
- Start by hard boiling the eggs. Place them in a pot, cover with cold water, and bring to a boil. Once boiling, cover and remove from heat. Let them sit for 12 minutes.
- After soaking, transfer them to an ice bath for 5 minutes to cool. This helps with peeling.
- Once cooled, peel the eggs and slice them in half lengthwise.
- Remove the yolks and place them in a mixing bowl. Mash them with a fork.
- Add the mayonnaise, Dijon mustard, salt, and pepper to the yolks. Mix until smooth.
- Divide the yolk mixture into two bowls. In one bowl, add red food coloring until you reach your desired shade. In the second bowl, add blue food coloring.
- Now, take a piping bag (or a zip-top bag with a corner snipped off) to fill the egg whites with the colored yolk mixtures. Alternate the colors for a fun, patriotic look.
- Garnish with fresh parsley or chives for a pop of green. Enjoy!
