- 1 lb Italian sausage
- 1 medium onion, diced
- 2 cloves garlic, minced
- 4 cups chicken broth
- 2 cups heavy cream
- 1 cup grated Parmesan cheese
- 2 cups fresh spinach or kale
- 1 cup carrots, sliced
- 1 cup diced potatoes (optional)
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Olive oil for sautéing
Instructions
- In a large pot, heat a drizzle of olive oil over medium heat. Add diced onion and cook until translucent, about 3-4 minutes.
- Add minced garlic and sausage, breaking it up with a spoon. Cook until browned, about 5-7 minutes.
- Pour in the chicken broth and bring it to a simmer.
- Add sliced carrots and diced potatoes. Cook for about 10 minutes until tender.
- Stir in heavy cream and grated Parmesan cheese. Let it simmer for another 5 minutes until well combined.
- Add spinach or kale and Italian seasoning. Stir until the greens are wilted, about 2-3 minutes.
- Season with salt and pepper to taste before serving. Enjoy hot!
