Ingredients

  • 1 lb Italian sausage
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups heavy cream
  • 1 cup grated Parmesan cheese
  • 2 cups fresh spinach or kale
  • 1 cup carrots, sliced
  • 1 cup diced potatoes (optional)
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions

  • In a large pot, heat a drizzle of olive oil over medium heat. Add diced onion and cook until translucent, about 3-4 minutes.
  • Add minced garlic and sausage, breaking it up with a spoon. Cook until browned, about 5-7 minutes.
  • Pour in the chicken broth and bring it to a simmer.
  • Add sliced carrots and diced potatoes. Cook for about 10 minutes until tender.
  • Stir in heavy cream and grated Parmesan cheese. Let it simmer for another 5 minutes until well combined.
  • Add spinach or kale and Italian seasoning. Stir until the greens are wilted, about 2-3 minutes.
  • Season with salt and pepper to taste before serving. Enjoy hot!
