- 1 pound carrots (peeled and cut into sticks)
- 2 tablespoons olive oil
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon fresh parsley (chopped, optional for garnish)
Instructions
- Preheat your oven to 425°F (220°C).
- In a large mixing bowl, combine the carrots, olive oil, garlic powder, salt, and pepper. Toss until the carrots are well coated.
- Spread the carrots in a single layer on a baking sheet lined with parchment paper.
- Roast the carrots for 20-25 minutes, shaking the pan halfway through.
- In the last 5 minutes of roasting, sprinkle the grated Parmesan cheese over the carrots.
- Remove from the oven and garnish with fresh parsley if desired. Serve warm.
