  • 1 lb chicken tenders
  • 1 cup breadcrumbs (panko preferred)
  • 1/2 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • to taste Salt and pepper
  • 1/4 cup all-purpose flour
  • 2 large eggs, beaten
  • to taste Cooking spray or olive oil for drizzling

Instructions

  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone mat.
  • In a shallow bowl, mix together the breadcrumbs, Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper.
  • In another bowl, add the flour. Season it lightly with salt and pepper.
  • In a third bowl, beat the eggs until well combined.
  • Take each chicken tender and coat it in flour first, shaking off the excess.
  • Then, dip it into the beaten eggs, allowing any excess to drip off.
  • Finally, coat the chicken in the breadcrumb mixture, pressing gently to adhere.
  • Place the coated chicken tenders on the prepared baking sheet, and lightly spray or drizzle olive oil on top.
  • Bake in the preheated oven for about 15-20 minutes or until golden brown and cooked through.
  • Let them cool slightly before serving. Enjoy!
