  • 4 pieces boneless, skinless chicken breasts
  • 1 cup Parmesan cheese, grated
  • 1 cup breadcrumbs (Panko recommended)
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste Salt and pepper
  • 1 tablespoon olive oil
  • to taste Fresh herbs (parsley, basil, thyme) for the herb sauce
  • 1/2 cup Greek yogurt or sour cream for the sauce
  • 1 tablespoon lemon juice

Instructions

  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • In a shallow bowl, whisk the eggs with a pinch of salt and pepper. In another bowl, mix the grated Parmesan cheese, breadcrumbs, garlic powder, onion powder, and a bit more salt and pepper.
  • Dip each chicken breast into the egg mixture, allowing excess to drip off, then coat it with the Parmesan breadcrumb mixture.
  • Place the coated chicken breasts on the prepared baking sheet and drizzle with olive oil. Bake for 25-30 minutes or until golden brown.
  • While the chicken is baking, combine Greek yogurt, lemon juice, and chopped fresh herbs in a bowl. Season with salt and pepper.
  • Once the chicken is done, let it rest for a few minutes before serving with the herb sauce.
