  • 4 pieces boneless, skinless chicken breasts
  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs
  • 2 pieces eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper
  • 1 tablespoon olive oil
  • 4 cups mixed salad greens
  • 1 cup cherry tomatoes, halved
  • 1 piece cucumber, sliced
  • to taste Your favorite dressing

Instructions

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • In a shallow bowl, whisk the eggs with a pinch of salt and pepper.
  • In another bowl, combine the grated Parmesan, breadcrumbs, garlic powder, and Italian seasoning.
  • Take each chicken breast and dip it in the egg mixture, then coat it with the breadcrumb mixture.
  • Place the coated chicken on the prepared baking sheet and drizzle with olive oil.
  • Bake for 20-25 minutes or until the chicken is golden and cooked through (internal temperature should reach 165°F).
  • While the chicken is baking, prepare your salad by mixing the greens, cherry tomatoes, and cucumber in a large bowl.
  • Once the chicken is done, slice it and arrange it on top of the salad.
  • Drizzle with your favorite dressing and serve immediately.
