- 4 pieces boneless, skinless chicken breasts
- 1 cup grated Parmesan cheese
- 1 cup breadcrumbs
- 2 pieces eggs
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning

- 1 tablespoon olive oil
- 4 cups mixed salad greens
- 1 cup cherry tomatoes, halved
- 1 piece cucumber, sliced
- to taste Your favorite dressing
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a shallow bowl, whisk the eggs with a pinch of salt and pepper.
- In another bowl, combine the grated Parmesan, breadcrumbs, garlic powder, and Italian seasoning.
- Take each chicken breast and dip it in the egg mixture, then coat it with the breadcrumb mixture.
- Place the coated chicken on the prepared baking sheet and drizzle with olive oil.
- Bake for 20-25 minutes or until the chicken is golden and cooked through (internal temperature should reach 165°F).
- While the chicken is baking, prepare your salad by mixing the greens, cherry tomatoes, and cucumber in a large bowl.
- Once the chicken is done, slice it and arrange it on top of the salad.
- Drizzle with your favorite dressing and serve immediately.
