- 1 pound of breakfast sausage
- 8 large eggs
- 2 cups of milk
- 2 cups of pancake mix
- 1 tablespoon of baking powder
- 1/4 cup of maple syrup
- 1 teaspoon of vanilla extract
- 1/2 cup of shredded cheese (optional)
- Cooking spray or butter for greasing
Instructions
- Cook the breakfast sausage in a skillet over medium heat until browned; drain and set aside.
- Whisk together eggs, milk, maple syrup, and vanilla in a bowl.
- Mix pancake mix and baking powder in another bowl, then combine with the egg mixture until just mixed.
- Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish, layer cooked sausage, and pour batter over it.
- Bake for 25-30 minutes until golden brown and toothpick comes out clean.
- Let cool, slice, and serve warm with extra maple syrup.
