One Pot Taco Pasta

A quick and easy taco-inspired pasta dish cooked in one pot for minimal cleanup. Perfect for busy weeknights!

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 1 can (14 oz) diced tomatoes
  • 2 cups beef broth
  • 8 oz pasta (penne or rotini)
  • 1 cup corn
  • 1 cup black beans, drained and rinsed
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  • In a large pot, brown the ground beef over medium heat until fully cooked, about 5-7 minutes. Drain excess fat if necessary.
  • Add the diced onion and minced garlic to the pot, cooking until the onion is translucent, about 2-3 minutes.
  • Stir in the taco seasoning, diced tomatoes, and beef broth. Bring to a simmer.
  • Add the pasta and corn, stirring to combine. Cover and cook for about 10-12 minutes, or until the pasta is al dente. Stir occasionally to prevent sticking.
  • Once the pasta is cooked, stir in the black beans and half of the cheese. Cook for an additional 2-3 minutes until heated through.
  • Remove from heat and sprinkle the remaining cheese on top. Cover for a few minutes until the cheese melts.
  • Serve hot, garnished with fresh cilantro if desired.
