- 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 packet taco seasoning
- 1 can (14 oz) diced tomatoes
- 2 cups beef broth
- 8 oz pasta (penne or rotini)
- 1 cup corn
- 1 cup black beans, drained and rinsed
- 1 cup shredded cheese (cheddar or Mexican blend)
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
Instructions
- In a large pot, brown the ground beef over medium heat until fully cooked, about 5-7 minutes. Drain excess fat if necessary.
- Add the diced onion and minced garlic to the pot, cooking until the onion is translucent, about 2-3 minutes.
- Stir in the taco seasoning, diced tomatoes, and beef broth. Bring to a simmer.
- Add the pasta and corn, stirring to combine. Cover and cook for about 10-12 minutes, or until the pasta is al dente. Stir occasionally to prevent sticking.
- Once the pasta is cooked, stir in the black beans and half of the cheese. Cook for an additional 2-3 minutes until heated through.
- Remove from heat and sprinkle the remaining cheese on top. Cover for a few minutes until the cheese melts.
- Serve hot, garnished with fresh cilantro if desired.
