Before you jump into cooking, gather these ingredients:

  • 2 cups of jasmine rice
  • 1 lb of boneless chicken thighs, cut into bite-sized pieces
  • 2 tablespoons shawarma spice mix
  • 1 onion, finely chopped
  • 4 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can of diced tomatoes (14 oz)
  • 4 cups chicken broth
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

These ingredients are easily accessible and will create a flavor explosion in your mouth!

Instructions

  1. Heat olive oil in a large pot over medium heat, add onion and sauté until translucent, then add garlic and cook for another minute.
  2. Add chicken pieces and shawarma spice mix; cook until chicken is browned on all sides.
  3. Add bell pepper, canned tomatoes, rice, and chicken broth; mix well and ensure rice is submerged.
  4. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes.
  5. Remove from heat, let sit for a few minutes, fluff rice with a fork, garnish with parsley, and serve.
